Will weather-proofing stop leaks?

Quick answer: No. Weather-proofing only protects the fabric and helps it dry; it won’t seal leaks. On modern soft tops the fabric is cosmetic — the hidden neoprene membrane keeps water out. Most leaks come from seals (hood/doors/windows) or blocked drains; if the fabric itself leaks, a replacement hood is likely.

No it won't. A weather-proof coating to the fabric of your cabriolet hood only really stops it from staying wet and helps it dry out quickly. In a modern car, the fabric is only a cosmetic layer and doesn't provide any waterproofing. 

Underneath it is a neoprene layer which keeps out the water. If your car has a leak, it is most likely to be as a result of the rubbers around the hood and windows, or blocked drainage holes in the hood scuttle. It is very rare for water to leak through the hood, and in such a case would probably require a replacement roof.

Some older cars have a roof thin layer of fabric which is coated on the inside with a latex paint. These can be re-waterproofed with a fresh coat of latex, but you are still probably better off getting a new roof. Older convertibles from the 1950s and 1960s are generally best kept under cover in a garage or car port.
