This car's soft top was then given a hydrophobic coating to protect if for another couple of winters.

If left untreated, the hydrophobic coating will wear off, it will soak up water instead of repelling it. Dirt will accumulate in the fabric, creating a perfect environment for flora to  grow. The grit that gets into the hood also acts as an abrasive, which can cause wear on the hood unless you clean it periodically... and it's easy to keep clean when it has a water repellant coating.
